How to make Vegan Eggplant Cannelloni Ingredients:
– 1 whole eggplant
– 1 green zucchini
– 1 yellow squash
– 1 red bell pepper
– 1 green bell pepper
– 1/2 cup olive oil
– salt & pepper
Tomato sauce ingredients: 1/2 cup olive oil, 1/4 cup red onion, 1 tbs garlic, 6 fresh basil leaves, dash of salt and pepper, 1 cup of red wine, 2 quarts of tomato sauce
