SSFCC Recipe: Mascarpone Stuffed Caramelized Pears

Dominic DeGrande, the South San Francisco Conference Center’s head of catering has a special recipe to share with you today. Enjoy the Mascarpone Stuffed Caramelized Pears recipe, one of our favorite!

Ingredients

– 3 pears: ripe, seeded, cut in half & cored 

– 2 tbs butter 

– 1 cup brown sugar 

– 2 cups granulated sugar 

– 1 lb mascarpone cheese 

– 1 lb cream cheese 

– 4 oz powdered sugar 

– 1 tsp vanilla 

Procedure

Mix 1 cup of granulated sugar with 1 cup of brown sugar. Use mixture to throughly coat the halved pears. In a skillet, add the butter and start caramelizing the pears for 5 minutes on each side on medium heat. Make sure to not burn the sugar. 

Place pears on a sheet pan and put in the oven for 10 minutes at 350 degrees. Remove pears from oven and place in fridge to cool for 10 minutes. 

In a mixer, add the mascarpone, cream cheese, powdered sugar, and vanilla. Beat on low speed for 5 minutes and place mixture in a pastry bag. 

To make decorations, place on cup of granulated sugar in a non stick skillet on medium heat until sugar melts and is a caramelized. Use a table spoon to scoop heated sugar and drizzle on parchment paper in circular motions to create spirals. Leave to cool and harden. 

Lastly, stuff pears with 1-2 tablespoons of mascarpone filling then decorate with your caramelized designs.
